Tatanka Cafe began with a mission to make healthy, nutrient-dense food more readily available to their community. Since day one, bison has been the star of their menu. This lean meat packs a ton of flavor and is a great source of protein and nutrients.
Unlike other meats on the market, it is federally illegal to give bison antibiotics or growth hormones. Also known as the great American buffalo, bison roam freely for a majority of their lives and feed on hay or grass. With sustainability practices at the center of bison meat production, it is truly the epitome of nutrition and sustainability.

History of Bison
Bison were a staple for the Plains tribes of Native Americans, who relied on them for food, clothing, and shelter. By 1893, it was estimated that there were only about 300 living bison, down from an estimated 60 million that once roamed. This species is starting to make a major comeback in North America, and for good reason.
